Welcome to the boards! We are a gentle lot ~ don't worry :D
I can't see your age being a problem and the fact that you're a couple is on your side. You may be better booking an organised coach holiday. It will definitely be the cheaper option. You should be able to stay at one of the onsite hotels if you only go for a couple of nights. Friends of mine recently went on a coach for 3 nights for £150 each and got upgraded to the Hotel New York! Another friend of mine recently stayed at the Explorers Hotel which is offsite, but provides transport to the park. They said it was quite good.
I know we have paid almost £300 just for our chunnel crossing New Year
If you've any questions about the drive etc, just shout!

The only problem is i went on the disneyland paris website and had a look at the prices, only to see it mentioned that there must be 1 over 18 per room booked......

We've booked to go this December staying in the New York for 4 nights and going via Eurostar and for the two of us it cost just over £500 - thats park tickets as well all going direct through Disney.

Have you tried the Explorers hotel Marty? That's owned by Airtours, not Disney, so their age limits may be different. It's very close and they provide transport to the parks. Seems a bit crazy you can go abroad alone and almost kill yourself at 17 (not that I did ~ ahem   ) but you can't go to a family resort?!
Good Luck
