If they are tall enough, they'll be able to go alone, but you may not want them too? Some of the rides might be too much for the little one?

Big Thunder Mountain isn't nearly as bad as it may seem. I hate (loathe and despise :D ) coasters and I can handle this one.

I'm not too thrilled at having the daylights scared out of me either, but I'll go on Splash Mountain (the story is what makes it worth it).

The eleven year olds should be ok overall, it's the seven year old that you may have to make compensation for.

You can accompany them on line too, and then just take the "chicken exit" and let them board. That way they won't be standing in the queue alone for what could be a long time.

Most of the ride restrictions are based on height which any age child wishing to ride must meet, but I know a child cannot ride any of the Magic Kindom rides alone under the age of 7. My DD met most of the height requirements last year. The only thing she really wanted to go on and wasn't big enough for was Duelling Dragons, we had to skip that. What a shame!
If you look here it will tell you the height requirements :)

I'm not a ride person either, which is gonna make it hard for my DD when she gets older. DH won't ride either, and she LOVES rides....any kind of ride! My friend just got with her 10 and 12 year old, both of who were TERRIFIED by Haunted Mansion, so ya just never know!
