I make rum truffles (from a secret recipe :wink: ) to give as gifts.

Hey, I'll trade you my secret rum ball recipe for you secret rum truffle recipe :wink:

Okay, I think that our UK friends should start baking Christmas cookies too and for us here in the states I thought it might be fun to exchange cookie recipes with each other. I will let someone else figure out the metric conversion thingy, I'm sure Dawn has a formula somewhere :unsure:

I always loved making decorated cut-out cookies, too, Donna! I still have my
mother's cookie cutters from the 1940s.

Definitely can to losing enthusiasm for baking! When my mother and I reached 35 trays one year, we quit! We had to start baking in mid-November. I had an assembly line going every night when I arrived home, and spent the weekends preparing some of the ingredients (nuts, candied cherries & pineapple, dried apricots, dates, etc.). I'd bake everything prepped the previous night, clean up and measure dry ingredients and check to be sure we had everything else we needed, then start over the next night.

Definitely took some of the joy out of it!

Won't be baking this year, but I think I'm going to start gently in 2005.

I have my grandmother's cookie cutters. It's hard to find them that nice and sturdy anymore. DH and I still make cut out sugar cookies. Actually I made them with a friend last year.

We used to get together with my cousins and make them every year when we were kids. Found out that my cousin's 4 year old hasn't seen them made!!! Will have to have him over this year and show him what he's missing.

I can't wait!!! I think I'm going to make some pumpkin shaped sugar cookies for Halloween.

Definitely up for some good holiday recipes!!

Every year, one of my mom's friends has a cookie exchange party. Last year we baked 9 dozen to share. Of course you come home with 9 dozen too....

Ok.. Ill start

Here's is the recipe for watermelon juice.

You cut up the watermelon, remove all the seeds and put it in the blender, then you blend it some more (3 parts juice, 1 part water) and add enough sugar for your liking...

Oh, I can imagine it could easily take an hour! All that cutting and seeding and blending! :eek: But at least no fires! :D :D

Bad sugar, candyman. Very bad sugar. It wasn't pure cane (so who would have thought to read the darn ingredients on a bag of SUGAR). I won't go into precise detail, but it made a wicked mess out of a refrigerator full (and I do mean full) of many kinds of cookie dough and brownies (I'd mixed them all the day before to bake the next day). That was the end for me. Never again.

They have walnuts, candied cherries, cloves, cinnamon, raisins and dates in them. They are soooo good and I don't like fruitcake (kind of reminscent to that)

Trust me Johnie, when it comes to baking, you need to explain everything to me.

candyman, it had additives of other "oses" which resulted in a much softer end product. The brownies were so soft that they would hold together when cut in to squares. So, trying to salvage them, I made spheres out of them by pressing the bits together. I'm sure you know exactly what a "sphere" of brownie looks like. :blush: Rolling them in powdered sugar didn't help. :sigh:

I forget the brand name of that sugar, but you can bet I never bought anything other than 100% pure cane sugar after that!

Baking is the one cooking thing I do well. However, I do seem to have some difficulties. My grandma sent me a recipe and had all the # marks in the recipe. I had NO idea what that was supposed to mean. # equals pound :blush: I learn something new every day.

I make some pretty mean Kaluha Balls.... I also have a recipe for a Kalhua bread that has to sit wrapped in kalhua soaked cheese cloth for 2 weeks.... I'll be glad to share if anybody wants the recipes...

Well, this is a TOP SECRET family recipe, but seeing as how we're all family here, I'll share with you :wink:

Sugar Cookies
1 Cup Sugar
1 Cup Butter
2 Eggs, well beaten
3 and 1/2 Cups Flour
2 Teaspoons Baking Powder
2 Teaspoons Vanilla
Roll out to desired thickness and cut using decorative cookie cutters. (My mom likes her cookies thin and crispy, I like mine thicker and soft)
Bake at 350 degrees F for 7 to 8 minutes, or until golden brown on bottom.

Icing
3 Cups Powdered Sugar
1/3 Cup Butter or Margarine, softened
1 1/2 teaspoon Vanilla
2 Tablespoons milk
Mix powdered sugar and butter. Stir in vanilla and milk.


Once mixed separate into different bowls for each color of icing desired using food coloring drops, or gels (I like the gels, because they don't thin out the icing too much.)

Puppy Chow
1/2 Cup butter
1 C peanut butter
12 oz pkc of chocolate chips
12.5 oz pkg of Crispix cereal
Powdered sugar, at least 3 cups

Melt butter, peanut butter, and choc chips together just until smooth. Put cereal in large bowl and pur melted mixture over it. Stir gently to coat all pieces - it will clump together.

Put at least three cups powdered sugar in large paper bag. Add cereal mixture. Roll top of bag closed and start shaking. Add more powdered sugar until each piece is coated.

Whitequeen, is the difference between the measures because in the UK ingredients are more often weighed (dry ingredients, that is)? At least that's the impression I got from that other UK chef. You know, that Oliver guy? :lol: Whereas here in the US (for home bakers anyway) we most often simply measure by volume. Although I do have a scale, I honestly don't use it for much other than portion control.

That's a good idea :thumbs: We can get both things at any dollar store and since they are almost always plastic, they would be very light to so won't cost much to ship over.

Okay anyone wanting a set of measuring cups and spoons let me know and I'll see what I can do :D

Yes 'Tink, you measure by volume, we measure by weight. So your measurements depend upon how the item packs together in the cup. This is Food Science folks!!! :lol: I knew it would come in handy one day. :thumbs:

It's an eight ounce measure, dry differs from liquid. It's a precise measurement, not any old cup. :D

Yep, on top. You can put it on in such a way as to actually make "pictures." Instead of chosing just one color, for instance, you can choose several colors to make the cookie look more realistic. I'm not saying it very well but you get the idea!

Ive seen those cookies with icing on top, but they aren't common in MExico... so...

Anyway.. you put the icing, and then, you put them in the fridge for the icing to dry?, or do they go back into the oven?

Im just too dumb.... Never ask to taste my cookies... lol...

No, not back in the oven. Just ice them, and then leave them a bit. They'll "set." I always found it better to not stack them though. If you must, be sure to put a layer of waxed paper, or cling wrap between them.

Gingerbread!!! Yum....

1 cup shortening
1 cup granulated sugar
1 egg
1 cup molasses
2 tablespoons vinegar
5 cups SIFTED all purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 to 3 teaspoons ground ginger
1 teaspoon ground cinnamon
1 teaspoon ground cloves

cream shortening and sugar, beat in egg, molasses and vnegar. Sift together dry ingredients, blend together. Chill for 3 hours.

Roll dough 1/8 inch thick on lightly floured surface. Cut in shapes. Place 1 inch apart on greased cookie sheet. Bake at 375 degrees for 5 to 6 minutes. This makes about 5 dozen cookies.

You can ice them when they've cooled. I normally just eat them plain. :)

Who ever uses this recipe, I normally put 1 1/2 teaspoons of cinnamon, just cos I love cinnamon. and the 2 to 3 teaspoons of ginger...I do 2 1/2.

Dawn!! I found this, and I thought of you!!

DEATH BY CHOCOLATE!

1 Box devils food cake mix
1 can Hershey's Chocolate syrup
3 pkg Knorr Chocolate mousse
2 8 oz containers Cool Whip
4 Heath or Skor Candy bars

Grind up candy bars in food processor. Bake cake mix according to directions in 13 x 9 inch pan. While cake is still warm, poke holes in cake. Pour chocolate syrup over cake and into holes. Let soak in and cool.

Make mousse according to directions ( you can use chocolate pudding if you don't have mousse). Using a large bowl, layer in the following order. First place pieces of chocolate cake in bowl until bottom is full. Next put a layer of chocolate mouse, then a layer of cool whip...top with candy bars...chill and serve.

They are good Mari...don't worry if they don't make sense. The very first time I made these cookies, I was 15, and instead of "creaming" the shortning and sugar, I cooked it so it was really vegetable oil and melted sugar. The cookies came out ok, but HARD!

and Dawn, solid vegetable oil it is. I just couldn't think of another word! But don't use butter! It makes the gingerbread taste funny.

Nope, this recipe doesn't have to be refrigerated before baking. I do remember my mom used a recipe when we were little that had to be cooled (we'd sit the covered bowl outside for awhile).

Mari - We color the icing in mostly 3 colors, red, green, and yellow. My mom's favorite is a green christmas tree shaped cookie. Just let the cookies completely cool, then ice, let the icing set or dry before putting them away, just like 'Tink said. And I do stack them in a Tupperware container with waxed paper in between.

I don't get too fancy, but you can also put the colored sprinkles, or balls, or whatever you fancy on them while the icing is still wet.

Oooooooh, don't replace shortening with lard unless you are making pie crust. That would be most nasty! Blech. Would most likely make the cookie taste like an old boar hog. :eek: :sick: (I don't like it for pie crust either, but lots of folks do. I suppose it's ok for a savoury pie, but it's nasty for a sweet pie. But again, lots of folks like it for those types too).

Dawn. Shortening is Butter. :thumbs:
Use Butter in Cakes & Cookies.
If used in Pastry all Butter can be used for a rich pastry or half lard & half butterfor a more economical pastry.

Dawn!! I found this, and I thought of you!!

DEATH BY CHOCOLATE!

1 Box devils food cake mix
1 can Hershey's Chocolate syrup
3 pkg Knorr Chocolate mousse
2 8 oz containers Cool Whip
4 Heath or Skor Candy bars

Grind up candy bars in food processor. Bake cake mix according to directions in 13 x 9 inch pan. While cake is still warm, poke holes in cake. Pour chocolate syrup over cake and into holes. Let soak in and cool.

Make mousse according to directions ( you can use chocolate pudding if you don't have mousse). Using a large bowl, layer in the following order. First place pieces of chocolate cake in bowl until bottom is full. Next put a layer of chocolate mouse, then a layer of cool whip...top with candy bars...chill and serve.
My mom makes a similar thing that she calls a Chocolate Bomb. It uses Chocolate Pudding instead of mousse (not instant) and the cake, pudding, cool whip and candy are layered in a large bowl. It is very rich but very very very yummy

About the icing...

What do you use to put in on the cookies? a knife? your fingers? Im having a 7 year old and a 4 year old do it... so... any ideas??? Thanks!!! :D

A thin bladed flat knife works best. Four year old? Ummm...fingers are probably going to be the implement of choice! :yes:

I am going back to re-do the icing recipe. Posted that from an email from my parents. Not sure where they got that recipe, but it's so wrong. I tried it and the icing was so runny.

Actually, if you wanted to use a single color on the cookie, for example all green on a Christmas tree, you could have it thin like a glaze and just pour it on. That would save on the fingers and thin knives! :D You could then sprinkle the multi colored non-pareils over it. And so on...

For Santa you could use a thin red, and follow up with red sprinkles. Reindeer you could use chocolate/chocolate sprinkles... etc.

But slathering it on with knives and fingers is really much more fun. You can add detail too! :yes:
