With 6 passengers in a mini-van, 2 of them being in car seats, will I be able to fit an ECV in it too, for transportation purposes to and from the parks?

If there was no luggage in there and you dotted the parts about under people's feet.......yeah.........just.

Try and look in a Chrysler Voyager if you know someone who has one. That's about the size you get. We went for an 8 seater for 5 of us. Well worth the extra room.

My concern is if the rental minivans have storage room behind the rear seat. If so then it should work, since the baggage would be out of the van when we would be transporting it.

The storage at the back of the seats in a mini-van isn't very big when all the seats are being used. You wouldn't be able to get all of the ECV back there in it's different parts.
