I'll be there the first 2 weeks of January. I know the weather will probably be icky and cold, and I've heard you can still get burnt. What are the chances of looking bright red if you forget your suncreen in January?

Very good. The weather is not always icky and cold. I've burnt myself silly in January, so never underestimate the strength of the Florida sun!

Even if the air is cold, the sun's UV rays on a clear January day are as dangerous as in any summer day.

You should still wear sunblock or a moisturizing cream with UV protection and sunglasses with UV block.
