We are going in 2 weeks time, have not bought tickets in advance to the Parks, will this be a problem for us. As we only have 1 week in WDW we would also like to see Orlando and spend some time in the Hotel pools, so thought 5 day ticket would not allways be used, what do you think?
We have not hired a car for the duration of the visit as staying on the WDW site, will this be ok for us.

If you don't plan on leaving WDW, you can make due without a car.
The advantage to buying your tickets early is that they're cheaper. Remember that as of now, unused days never expire (there are new ticket options coming into play in January and some will expire)

Car probably not needed in WDW, shuttles are OK, if you are prepared to wait, sometimes between 30 to 60 minutes!
Best to buy a 5 or 7 day hopper in the UK before departure if you only plan to go to Disney Theme Parks, assuming you are not going to Seaworld, Universal Studios, Island of Adventure, WetnWild or Busch Gardens.
With 2 weeks to go you could still probably buy the hopper and get it delivered. It will be cheaper than buying at the gate and you will not need to wait in the ticket office line.
Any days you do not use can be used if you return in future years.
