My wife and I are going to Disney in October,2005. I was curious if anyone knows if any Disney restaurants accommodate low-carb lifestyles.

If you speak to your waiter, they will often send the chef out to talk to you about your meal.

Low carb at WDW can be a bit challenging, but not impossible. In the full service restuarants, especially those of the resort hotels, they are very accomodating to making changes to the featured menu.
Substitutions of asparagus, for starch are quite do-able, for instance.
Sugar Free desserts are a bit more challenging, and you will remember that just because a dessert is sugar free, that doesn't make it low carb, right? :)
There is a SF cheesecake at the Boardwalk Bakery and some SF ice cream at Beaches and Cream. There is no sugar added (which differs from SF) ice cream at the MK.
There are some low carb packaged candies at the Screen Door (on the boardwalk).
There are salads available at some counterservice restuarants. The US pavilion in the WS has a chicken ceasar that is ok.
If you have the opportunity, you may want to stock up on some low carb snacks, or food items for your room.
There are some good low carb options (prepared) available at Publix. They even have packages of (peeled) hard boiled eggs (in the packaged cheese section).
Careful planning should see you through ok. Just don't let yourself get to the point where you are starved!
Oh, and off site there is a nice low carb menu available at The Ale House, which is not far at all from DTD.

Do you mean have a separate low carb items menu?
During our last trip I did not each much at the parks, but what I did do was order a hot dog/burger without the bun, stuff like that. I do not recall seeing any low carb burgers, low carb ice cream if that is what you mean.

With a little (ok, a fair amount!) of will power, I actually managed to lose a few pounds when I was in Orlando this Easter! Absolutely unheard of for me! I was fairly careful - but not manic about it, and I think all the walking around the theme parks really helped! (BTW, in the past I have been known to gain at least 14 pounds on a 2 or 3 week vacation!)

We noticed a low carb option on quite a few menus.......not that we wanted them  I lost 4 lbs after a fortnight of stuffing myself! It just shows it is the exercise that is important :D

I ate more than usual this past trip, with all of the UOG meets, but didn't gain any weight. Didn't lose any this trip, either! I usually shed a pound or two each day with all of the walking, but with so many evening events, I didn't spend as much time in the parks during the day.
Had just as much fun--just differently! :)

All that walking is a good thing :) now if I could just apply that in my daily life.......
Teppanyaki in Epcot would be a good place for low carb as well.

I remember noticing Atkins sections in some menus.
I was also very proud of not putting any weight on on our trip in Sept, considering almost every night for 2 weeks I ate things that I would never ever consider eating on a regular basis at home, having huge desserts etc - all that walking definitely pays off!
