What time should I start calling in the morning to get a Priority Seating for a restaurant?

Depends on where you're looking to book. CRT? Right at 7. In fact start dialing just before 7. Other places you can wait an hour or two

We didn't want anything partiularly hard to get when we rang for ours last year.

If this is the case with you, call 90 days before your holiday finishes, rather than when it starts, so that you can book all of them at once.
