If you buy tickets from WDW online, can you pay with check or does it have to be a credit card? :)

You can send a check or Money Order.
Not a problem.
Even just the deposit and pay the rest in cash when you get there.
Depending of course on how far ahead you book.

No CC only.
You can call them for a res and then send a check.
