I was thinking of booking a late lunch or early dinner after we spend some time at Epcot. We will be relying strictly on Disney Transportation. What hotels would be easiest & fastest to reach from Epcot?

You could actually walk to the resorts in the Boardwalk area which Junior Mickey suggested without having to bother with WDW transportation.
You would exit Epcot via International Gateway, located in-between "the UK" and "France", rather than the main entrance to the park.

Why not walk to the Boardwalk area as others have said. If you go round to the Yacht Club are you will find the most wonderful hidden dining gem I have ever eaten in at WDW.
The Yacht Club Galley is a fantastic lunch venue. It is bright and airy and is never too busy. The food is fantastic and not at all pricy. Skip dessert and then you can go next door for an Ice cream from Beaches and Cream.

New England Clam Chowder - traditional creamy chowder $4.99
Buffalo or BBQ Chicken Tenders with blue cheese dip and celery sticks $5.99

I cant tell you how good the fish and chips were - lovely light batter and very fresh fish. I had beef and barley broth and a massive shrimp filled croissant. Ds had the crab cakes which he pronounced delicious. The whole meal cost $33 and we cant wait to go back again.

Must agree, the galley is amazing.
We love popping in there for a relax.... the sandwiches are amazingly large!
If you want a really great dinner, then consider the yachtsmans steakhouse though!

Have you considered staying at Epcot and having dinner there? I have heard some amazing things about the restaurants in the World Showcase. I couldn't decide between Le Cellier and Chef's de France so we are spending two evenings in Epcot enjoying these restaraunts. Just a thought......

I really like the idea of walking from Epcot through the International Gateway and going to the Yacht Club's Galley. Any estimate of how long a walk it would be from the beginning of the World Showcase?

From the start of the showcase, maybe 10-15 mins depending how fast you walk and how much the crowds are in the way ;-)

There are several excellent restaurants on the boardwalk side too. Flying Fish Cafe is one.
I've had a dreadful experience at Yacht Club Galley so cannot recommend them.
If you enjoy shellfish, Cape May Cafe at the Beach Club is a lovely buffet.
Palio's at the Swan is quite nice too, as are several of the other Swan and Dolphin restaurants.
You could take the EPCOT monorail to the TTC and from there take the resort monorail to the GF, CR, or the Poly and have dinner in any one of those resorts. There are many very nice places between them.

Another vote for Beaches and Cream here! It is at this restaurant that I have eaten my ONLY Disney hamburger - and the first hamburger I'd eaten in 6 or 7 years! It was yummy! And their chocolate malts are great, also!
