For those of you that would like to try it, here it is.
Fruit Cake Recipe
Ingredients
(225g) 8 oz Self Raising Flour
(100g) 4 oz Margarine
(100g) 4 oz Caster Sugar
(175g) 8 oz Mixed Dried Fruit
1/2 tsp of both Cinnamon & Mixed Spice
1 Medium Egg (beaten)
Glace Cherries (optional)
1-2 tablespoons of Brandy/Sherry (optional)
Heat oven to Gas Mark 4, 180 degrees C or 350 degrees (F). Grease a 1 lb loaf tin.
Place the fruit and cherries (if applicable) into a large saucepan, add caster sugar and margarine and place over a low heat, until the margarine melts and the sugar dissolves, remove from the heat and allow to cool.
When cooled add the beaten egg, alcohol (if applicable) and flour a little at a time to the saucepan and mix together until the mixture begins sticking to the side of the saucepan and becomes difficult to stir. Place the mixture in the loaf tin and cover with silver foil.
Place in the oven and bake for approximately 1 hour or until the knife comes out clean from the middle when you test it. If the knife comes out with cake mixture on it then cook for a further 10- 15 minutes.
