Coming down to WDW over Christmas holiday staying at Coronado Springs wondering what building to ask for ?

Here is an aerial showing all the different sections of the resort. It's very spread out. I don't consider this to be a problem, but some people do. I don't mind the walking. If I don't want to walk, I just take the bus that goes around the loop.
If you want to be close to "El Centro" or main building with the bus stop out of the resort and the "Pepper Market" restaurant, "Casitas" or "Cabanas" are your choices. But notice that a part of "Casitas" goes around the center lake and might still be far away from "El Centro". "Casitas" is also the area closest to the Convention Center, so many people staying there for business will be placed in "Casitas" first. It gets very busy with convention traffic. Also people that require special assistance will be accommodated in the first "Casitas" building which rooms are almost all wheelchair accessible.
If you want to be close to the pool, I would choose "Ranchos" first and "Cabanas" second.

As Sorcerer Mickey noted, it really depends on your needs.
If you're using WDW transportation, there are 4 bus stops at CSR. One for each "themed" area and one at El Centro. So, no matter where you stay, you aren't too far from bus transportation.
Cabanas section tends to be the most popular with guests and tends to be the most difficult to get. Ranchos is farther away from the main buildings, but closer to the pool and The Dig Site. Casitas is the largest area, and usually accommodates many of the convention guests.
I enjoyed my stay there in December, 2003.
